Chargrilled capsicum
red chillies
coriander
olive oil
garam masala
turmeric
yellow mustard seeds
tomatoes
pineapple
tomato sauce
red wine vinegar
Whisky
zest and juice of limes

[Polenta]
water
oil
polenta
parmesan cheese
salt and pepper
butter

[Crumb Mixture]
oats
tri-colour quinoa
breadcrumbs
parmesan cheese, grated
chopped thyme
zest limes

[Vegetables]
green beans
green and yellow zucchini
black oyster mushroom
red onion

● 料理步驟:
[Spiced Tomato & Pineapple Chutney]
1. Sweat down the chargrilled capsicum and chilli in the olive oil over medium heat.
2. Add the chop the root and stems of the coriander into the pan, until all the ingredients have softened.
3. Next add the garam masala, turmeric and mustard seeds, and cook for a few minutes.
4. Then add in the chopped tomatoes and pineapple, and let the mixture simmer for a couple of minutes,
5. Pour in the tomato sauce, red wine vinegar and Whisky, and then simmer for around 20-30 minutes stirring occasionally.
6. Finally, stir through the chopped coriander leaves, lime zest and lime juice.

[Oat Quinoa Chicken]
1. Mariantated chicken with yoghurt overnight.
2. Mix the oats, quinoa, breadcrumbs, parmesan, thyme and limes' zest in a bowl.
3. Coat chicken well in the oat mixture, and then pan-fried chicken in the oil for 1.5 minutes each side, or until cooked through.
4. Grill polenta on both sides until they are golden brown colour.
